Rich brown gravy

1 large onion, chopped

1 cup whole wheat flour

5 3/4 cups water

1/2 cup soy sauce

Place 1/4 cup water and onion in medium saucepan. Cook, stirring occasionally until onion softens, about five minutes. Add the flour and mix well. Cook another three minutes, stirring occasionally. This should toast the flour and give it a rich flavor. After the flour and onions clump together, add the remaining water and soy sauce. Cook another five minutes, stirring frequently. Remove from heat. Place in blender and blend until smooth. Cover over medium heat in clean plan, stirring frequently until gravy thickens, about 10-15 minutes. Season with pepper to taste.
