No wedding is complete without a delicious, beautiful, breathtaking cake. Luckily, there is a perfect selection to choose from in Utah Valley.

 

Wedding Cakes By Dawna is a home-based business in Pleasant Grove. Owner Dawna Erickson has been creating wedding cakes for the past 23 years. She fell in love with baking when she was eight years old, living Arizona. A woman in her town made Barbie cakes and Erickson was instantly fascinated with baking cakes. She used her Easy-Bake-Oven to become a culinary master when she was 10 years old, and sold her first cake for $12.

 

Now Erickson averages 18-20 wedding cakes a week in her industrial-size kitchen during the peak of Utah County’s wedding season. She makes cakes in all different types and styles. “We used to do cake fountains,” Erickson said, “now people like smaller, three tier cakes without pillars.” Erickson also talked about how different ingredients impact the overall cake. “Butter cream tastes better,” Erickson said, “but fondant is more stable.”

 

Another place to order a custom wedding cake is Pink Icing. This home bakery, located in Springville, has been delivering beautiful cakes to Utah brides for the past eight years. Heather Nord’s business was a direct result of a friend’s request. Her college friend asked her to make a wedding cake, and that favor turned into a profitable business.

 

“I was thinking, ‘dang!’ That turned out good for my first wedding cake,” Nord said. “Then my friend’s friend saw the cake and told me she would pay me to do one for her wedding.”

 

Nord has a website and a thriving business. Although her specialty is wedding cakes, she also does specialty birthday cakes. A huge perk of Pink Icing is the accommodating gluten free cake they make. Coping with Celiac disease herself, Nord understands how refreshing it is for people to be able to find gluten free food. Much of Nord’s business comes from her gluten free cake.

 

Nord loves to stretch conventional limits of cake baking. She once created a leg lamp cake for a bachelor party, inspired from “The Christmas Story.” “I like to push the boundaries to see what I can do,” Nord said. “I love pushing my talents by trying new things. I like to be different.”
